Recipe: Pumpkin Waffles

Breakfast has always been my favorite meal of the day, especially on weekends. The weekend also happens to be the toughest time for me to keep my nutrition in check. I’m outside of my normal routine and crave a good cheat meal. This recipe satisfies the part of me that really just wants to go to Waffle House on a Saturday morning, but doesn’t want to have that sugar crash nap later.

Ingredients:

  • 4 eggs
  • ½ can of pureed pumpkin
  • 1 TBSP of pure maple syrup
  • 1 TBSP of grassfed butter or coconut oil (melted)
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1 tsp of pumpkin pie spice (nutmeg is a great substitute here as well!)
  • ¼ tsp of baking soda

Directions:

  1. Preheat waffle iron.
  2. Beat eggs in medium mixing bowl. Add pumpkin, vanilla, and maple syrup and stir until well combined.
  3. Add cinnamon, pumpkin pie spice, and baking soda and mix well.
  4. Stir in melted butter and then your batter is ready!
  5. Spoon out about 3-4 TBSP of batter into your heated waffle iron or pan. My waffles take about 90 seconds each, but if you’re making pancakes, wait until bubbles start to form in the batter before flipping.

Note: This recipe makes about 8 small waffles, so I usually eat 1 serving (4) and then reheat the rest in the oven the following morning. The flavor of all of the spices used in this recipe make it easy to eat these without any additional syrup. I like to top mine off with sliced banana for a little extra sweetness and potassium. Also worth noting…I’m not typically a fan of pumpkin, but these are darn good. They would pair well with bacon or breakfast sausage for extra protein!
