Recipe: Chocolate Mousse

Serves 4 – 6

Because sometimes you just need a treat and mousse sounds fancier than pudding! This one is gluten and dairy-free and includes some good, healthy fats from the avocado and coconut milk – so it’s very satisfying. You can opt to add in maple syrup or honey if you need it to be a little sweeter, but you can absolutely leave that out if you’re trying to cut any extra sugars from your diet. If you’re not an avocado lover, I still recommend trying it. It passes the test with even the pickiest eaters. 🙂

Ingredients:

  • 4 avocados
  • 2 ripe bananas
  • ½ cup unsweetened cacao powder
  • 1 tsp vanilla extract
  • 6 – 8 Tablespoons of coconut milk
  • 6 – 8 Tablespoons of maple syrup or honey (optional)
  • Dash of sea salt

Directions:

  1. Scoop the flesh of the avocados into a food processor and blend until smooth.
  2. Then add your bananas, cacao powder, vanilla, sea salt, coconut milk and maple syrup (or honey) to the food processor and blend until smooth.
  3. Refrigerate for 2 hours prior to serving. Garnish with fresh cut strawberries, blueberries, toasted coconut, or shaved cacao nibs!
