Recipe: Chocolate Mousse
Serves 4 – 6
Because sometimes you just need a treat and mousse sounds fancier than pudding! This one is gluten and dairy-free and includes some good, healthy fats from the avocado and coconut milk – so it’s very satisfying. You can opt to add in maple syrup or honey if you need it to be a little sweeter, but you can absolutely leave that out if you’re trying to cut any extra sugars from your diet. If you’re not an avocado lover, I still recommend trying it. It passes the test with even the pickiest eaters. 🙂
Ingredients:
- 4 avocados
- 2 ripe bananas
- ½ cup unsweetened cacao powder
- 1 tsp vanilla extract
- 6 – 8 Tablespoons of coconut milk
- 6 – 8 Tablespoons of maple syrup or honey (optional)
- Dash of sea salt
Directions:
- Scoop the flesh of the avocados into a food processor and blend until smooth.
- Then add your bananas, cacao powder, vanilla, sea salt, coconut milk and maple syrup (or honey) to the food processor and blend until smooth.
- Refrigerate for 2 hours prior to serving. Garnish with fresh cut strawberries, blueberries, toasted coconut, or shaved cacao nibs!
